Smaksnoter: Hasselnøtt, jordbær, karamell, sjokolade. Prosess: Manually selected ripe cherries, submitted to a controlled fermentation in anaerobic environment process in cherry for 96 hours, without exotic starter culture. Applying using own wild microbes from the on-farm facility in the airtight barrel. Afterwards dried as a natural, where it continues to yeast on the raised beds.

Our selection procedure is very strict, and we use the same standard with each micro-lot or constructed lot. Every small lot is individually cupped various times before being included within the main lot. In addition to cup quality, each coffee must meet strict physical requirements, based on our guidelines for moisture content and water activity.
